The word “gumbo” comes from the Bantu word Ki ngombo — meaning okra. Enslaved people carried seeds across the Atlantic hidden in their hair. Those seeds became the foundation of American cooking. And for two hundred years, Black women stood in plantation kitchens building the food culture of a nation — unnamed, uncredited, uncelebrated. Walk through the street food markets of Accra. Taste the Ghana food that survived the Middle Passage. Fufu. African food rooted in soil that fed a continent before it fed America. The Virginia Housewife — one of the country’s first cookbooks, published in 1824 — is packed with West African culinary traditions. Not one Black cook credited. Soul food recipes your grandmother made. Southern cooking every family claimed as their own. Ghanaian food nobody called by its name. This is Black American history.
